No. The video is decoded in your browser and the audio is written there too. Nothing is sent to a server, which you can confirm yourself in the Network panel of your browser's developer tools.
MP4, MOV and WebM. Their audio is normally AAC or Opus, which browsers decode natively. MKV and AVI are not supported.
Exporting to WAV or FLAC does not — the track comes out as it was decoded, with nothing added on top. Exporting to MP3 or OGG re-encodes once; at 192 kbps variable bitrate that is very hard to hear, but WAV or FLAC is the safe choice if the audio is going into further editing.
Video is decoded by the browser, which caps it at 20 minutes — audio files the engine reads directly (MP3, WAV, FLAC, OGG) get a full hour instead. Past that, an MP4 or MOV is split into parts automatically and each part can be extracted on its own. A WebM that long is refused rather than split, so convert it to MP4 first if you hit that.
